Kimberly May is a Senior Accredited Practising Dietitian and co-founder of Happier, Healthier – Nutrition & Dietetics. Originally from Kangaroo Island, Kimberly has called Gladstone home since 2019, where she has become a trusted and familiar face within the community.
Known for her warm, practical and client-centred approach, Kimberly specialises in complex clinical nutrition, NDIS support, eating disorders, enteral nutrition and paediatric feeding. As a certified SOS Feeding Therapist, she provides specialised therapy for fussy eating, ARFID and sensory-based feeding challenges.
Kimberly is passionate about creating an approachable, inclusive service that supports people of all ages and abilities. She also plays a key leadership role within Happier, Healthier — supervising clinicians, providing ongoing training, and offering mentorship to support team development and high-quality clinical practice across all locations.
Dedicated to professional development and community wellbeing, Kimberly continues to drive innovation, service improvement and strong health partnerships throughout Central Queensland.
Brie James is a Senior Accredited Practising Dietitian and co-founder of Happier, Healthier – Nutrition & Dietetics. Growing up in Brisbane, Brie moved to Gladstone in 2020 and has since become a highly respected clinician known for her compassionate, down-to-earth communication style.
Brie has extensive experience in complex clinical nutrition, NDIS support, eating disorders, enteral nutrition and paediatric feeding. She is dedicated to providing practical, sustainable nutrition strategies that empower clients to feel confident and supported in their health journey.
Brie is deeply committed to the growth and development of the Happier, Healthier team. She provides clinical supervision, mentoring and training to clinicians, ensuring high-quality, evidence-based care and a supportive environment for new and developing dietitians. Her leadership contributes significantly to service innovation, program development and clinical quality across the region.
Outside the clinic, Brie volunteers as the Vice President of the Gladstone Chamber of Commerce & Industry, contributing her expertise and passion to support the local business community and regional development.
Grace Hatton is an Accredited Practising Dietitian who joined the Happier, Healthier team in January 2025. Growing up on a cattle property, Grace brings a strong connection to rural communities and a genuine passion for improving access to quality healthcare across regional areas. She later completed her studies on the Sunshine Coast, where her love for health, sport and running further shaped her approach to nutrition and wellbeing.
As a skilled generalist clinician, Grace supports clients across a wide range of areas including chronic disease management, bariatric surgery nutrition, paediatric nutrition, gastrointestinal conditions and NDIS support. She is known for her warm, down-to-earth communication style and her ability to simplify nutrition into realistic, sustainable steps that suit each person’s lifestyle.
Grace plays a vital role in delivering Happier, Healthier’s outreach services, providing regular clinics in Biloela, Monto and Theodore, along with comprehensive online consultations for clients throughout Central Queensland. Her dedication, enthusiasm and evidence-based practice make her an invaluable part of the team and a trusted clinician for clients and families across the region.
Meg Callaghan is an Accredited Practising Dietitian who joined the Happier, Healthier team in January 2025. Originally from Ipswich, Meg brings a warm, empathetic approach to her practice and a strong belief in the power of food to support connection, wellbeing and everyday enjoyment. Growing up in a family where food was central to traditions and shared moments, Meg became a dietitian to help others experience food not just as nourishment, but as something meaningful, joyful and enriching.
As a skilled generalist dietitian, Meg supports clients across chronic disease management, bariatric surgery, eating disorders, gastrointestinal conditions and NDIS-related needs. She is known for her gentle communication style, evidence-based practice and ability to help clients feel supported, understood and empowered.
Meg works across multiple locations, providing care at Gladstone GP Superclinic (GGPSC), Biloela, and Gladstone, ensuring accessible and consistent support for clients throughout the region.
Outside of clinic life, Meg loves being outdoors – camping, beach days, and exploring new places – or spending time in the kitchen experimenting with baking. Her calm, relatable nature and genuine passion for food make her a valued member of the Happier, Healthier team and a trusted clinician for clients of all ages.
Laura Panochini is an Accredited Practising Dietitian and Paediatric Specialist who joined the Happier, Healthier team in mid-2025. Growing up in Brisbane, Laura has always had a passion for working with children and families, bringing warmth, patience and creativity to her practice.
Laura specialises in paediatric nutrition, including growth concerns, feeding difficulties, fussy eating, ARFID, sensory-based feeding challenges and gastrointestinal conditions. As a qualified SOS Feeding Therapist, she provides evidence-based, play-focused feeding therapy that supports children to feel safe, confident and curious around food.
Known for her gentle communication style and her ability to connect with children and parents alike, Laura uses practical, family-friendly strategies that make mealtimes more enjoyable and less stressful. She is committed to helping families build strong feeding foundations that support long-term wellbeing, development and positive relationships with food.
Outside of work, Laura enjoys baking for friends and family, often using it as a way to bring people together—something that reflects her belief in food as connection, comfort and celebration. Her warm approach and specialised expertise make her an invaluable part of the paediatric team at Happier, Healthier.
Latisha Lockyer is a key part of the Happier, Healthier team, supporting clients and clinicians as our morning administrator. With her calm, thoughtful presence and strong organisational skills, Latisha helps ensure each day runs smoothly — from managing bookings and client enquiries to creating a welcoming, supportive environment for everyone who walks through the door.
Latisha is currently completing a Bachelor of Social Work, driven by her passion for supporting people and contributing to meaningful, person-centred care. Her studies enrich her role at Happier, Healthier, where she brings empathy, professionalism and a genuine commitment to helping clients feel understood and cared for.
Outside of work, Latisha enjoys moments of quiet solitude with her cats, or spending time with loved ones — often with cards and a charcuterie board in front of her. She believes health and wellness are best approached gently, with a focus on lifestyle balance, connection and compassion — values that align beautifully with the culture at Happier, Healthier.

Taylor Vaati is a valued member of the Happier, Healthier administration team, supporting clients and clinicians during the afternoon shift. Born and bred in Gladstone, Taylor brings strong local knowledge, a friendly presence and a genuine commitment to supporting the community she calls home.
As a mum of two, Taylor understands the realities of balancing family life, health and wellbeing, which shapes her warm, practical and empathetic approach to client care. She is passionate about health and fitness and values making small, sustainable lifestyle choices that support overall wellbeing.
Taylor plays an important role in ensuring the clinic runs smoothly — assisting with bookings, client communication and day-to-day administration — while creating a welcoming, supportive experience for every client.
